Blueberry Kale Smoothie

Blending nutrient dense superfoods together can only make them better.  Well, at least in the case of fruit and yogurt it does.  On days when you don’t have time to construct a complete meal or to sit down at the table to savor the flavors of farm fresh ingredients, this blueberry kale smoothie delivers the brain food you need to keep you going.  Blueberries are referred to as a “superfood” due to the high level of antioxidants found in their nutrient profile.  Add in the kick of vitamin C and vitamin K that they pack, and it’s hard to say no to just a few more berries in your breakfast.

Find farm fresh blueberries in Massachusetts from July through August.

Ingredients

¼ cup organic blueberries, frozen

2 stalks organic kale, stemmed and chopped roughly

½ cup organic plain yogurt

2 Tbs organic almond butter

Maple syrup or honey to taste

Organic whole milk, amount desired to achieve thickness

Using frozen blueberries gives this healthy snack a tropical flair.

Directions

  • Place all ingredients (except milk) into a blender. Blend until smooth.  If mixture is too think or does not incorporate well, add small amounts of milk, blending after each addition, until desired consistency is reached.
  • Make more to share.
